The Precise Chopper

Shorter and with a flatter blade edge, precise knifework is the Santoku’s forte. Crafted with a minimalist design and optimized for swift downward strokes, the Santoku is the classic Japanese household chopper that handles meat, fish, and vegetables with clean, sleek force. A keen favorite of Food & Wine, the Santoku “glides through the grain of the meat so smoothly, it's almost instantaneous.”

Excellent sharpness

Cut clean. Cut easy.

Julienne tough root vegetables, cut flawless slices of protein, sail through prime ribs, and fillet fish like a pro. Our award winning 6.3-inch Santoku Knife is the Japanese take on a Western-style home cook’s knife, and is superbly adaptable.

Excellent wear-resistance

Never blunt. Always keen.

Engineered with an ultra-thin blade and an acute edge angle, the Hast Santoku knife cuts flawlessly every time. Designed to stay sharper for longer, you can cook and create whenever inspiration strikes. Hast powder steel knives are twice as sharp as well-known premium brands.

Matrix Powder Steel

Harder. Tougher.

Matrix powder steel is the next generation of premium steel. Compared to traditional high-carbon steel, matrix powder steel does what was once thought impossible — combine hardness, strength, and stability without compromise. It’s the driving force behind our superior sharpness, durability, and easy handling.

Red Dot Design Award Winner

Seamless. Timeless.

Precision engineering and master craftsmanship come together to create a flawless blade that’s perfectly balanced for effortless cutting. The crevice-free blade is sharp enough for vegetables, meat, fish, and leaves no room for food particles to accumulate.

The Perfect Gift For Chefs

Premium Looks. Artisan Feel.

Soft edges, polished lines, and a rounded knife heel makes Hast Santoku knives comfortable and natural in your hand. The rounded tip and the flat blade edge makes the Santoku knife even more playful and user friendly than our Chef’s Knife. A beautiful gift for any foodie or professional, our Santoku knife stands out in compact, premium packaging.

Best knife i own!

"It’s my most beloved and most used knife and I own a lot of knives. It keeps sharp for almost an eternity. Very light to handle and it looks great. This is really value for your money. Forget all those big brands and buy a Hast. you won't regret it."

Freek (5/5)

Curtis H. (5/5)

More than sharp

"The knife is ultra sharp, and cones with a front and rear blade protector. I mount my knives on a magnetic strip, so the blade protectors are important, and so are looks since the strip is front and center in my pantry."

Tyronee R. (4/5)

My go-to knife

"This knife has it all. I haven’t had to sharpen it yet, but once I do I will update this review to reflect how easily it sharpens snd how long I can go between sharpenings."

Janice S. (5/5)

Great knife

"This is one top-quality lifetime knife. This is a very nice quality product and I give it a 5-stars rating."

Lynn G. (5/5)

great quality

"Nice balance and length for making sushi"

Demetrius M. (5/5)

Perfect Santoku.

"I prefer a Santuko knife over a traditional chef’s knife and I like a shorter one like this. An 8” knife is just too long for tasks like cutting onions for me, which seems to be my most frequent task."

Michelle G. (5/5)

All in all... a great knife.

"This has become my go-to knife for slicing raw fish. The balance is really nice and length of the blade is well suited to sushi making. So far, the knife has remained sharp – a sharp blade is quite important in sushi (otherwise the rolls get smashed more than sliced), though, obviously, sushi doesn’t have a great tendency to dull blades."

Matt S. (4/5)

Sharp

"Very nice, very sharp, modern knife."

Angie E. (5/5)

Amazing knife

"Amazing, very sharp, cuts like butter and handles amazingly, A great addition to my kitchen."

Q&A

what is the difference between the selection and edition series
The Selection series knives are made of Japanese high-carbon stainless steel and the Edition series are made of more advanced powder steel. They are equally sharp. The edition series knives can keep its sharp edge longer than the selection series. But they both rated Excellent in edge retention by Catra.
